Fresh and tangy in its traditional form, the Paloma is reborn here with grapefruit and mango notes, but also bell pepper, cumin, and a hint of Cayenne pepper that delivers a slight chili kick.

For this revisited Paloma, begin by preparing an aromatic rim: mix salt with a pinch of harissa and a sprinkle of finely-ground dried rose petals. Rub a lime quarter round the rim of a highball glass, then soak it in the savoury mixture to create a spicy, floral rim.
Pour the white rum, the 1883 Paint the Town Red syrup and the fresh grapefruit juice into the glass. Add ice cubes, then top up with sparkling water* to provide a touch of fizz.
Stir gently to blend the flavors without touching the savoury rim.
This version of the Paloma combines freshness, complexity and heat with the spicy contrast of the syrup and the harissa/rose rim, offering a unique and vibrant taste experience.
