An indulgent, generous variation on Viennese Hot Chocolate, featuring white chocolate and mango.
Make a light white chocolate (with freeze-dried chocolate or by melting pieces in hot milk). Pour the hot chocolate in a transparent cup, add the puree (which will settle at the bottom), and top with whipped cream. Garnish with a mango fan and some chocolate shavings.
