A hybrid of dessert and molecular drink, this cocktail is, in truth, a deconstructed mint milk that takes the breath away.
Cream foam
30cl full-cream milk
10cl 1883 Mint syrup
12cl chilled milk
Foam some milk with the mint syrup: dissolve a gelatin sheet in 30cl of milk, add 10cl of Mint Syrup 1883 and 10cl of liquid cream.
Pour into a 500ml siphon, insert an N2O cartridge and leave to cool.
Squirt the mint-flavoured milk foam into a tumbler, sprinkle with chocolate shavings, and top off with the milk.
Serve with a large spoon.
