1883 WHITE AS SNOW SYRUP: 3CL
COCONUT CREAM: 5CL
LEMON JUICE: 2CL
MAGIC VELVET: 6 DROPS
LEMONGRASS SODA: 5CL
Pour the coconut cream, 1883 White as Snow syrup, fresh lime juice and a few drops of Magic Velvet into a shaker. Dry-shake energetically to emulsify the mixture and obtain a silky texture. Then add ice cubes and shake again, to chill the liquid and refine its exotic mellow style.
Strain the mixture into a highball glass (no ice), letting the foam makes itself at home. Add a dash of lemongrass soda water for a soupçon of sparkle.
Round off the creation by sprinkling a few roasted buckwheat seed bits on the foam, thus adding a crunchy and slightly toasty note that contrasts perfectly with the exotic flavors.
*For a classic version, the Magic Velvet can be replaced by egg white, which will provide the same subtly rich mouthfeel.
